Sa cuisine mĂȘle ses racines corĂ©ennes Ă un profond attachement au terroir belge, Ă la nature et aux produits issus notamment de son remarquable potager. Jâai plusieurs fois visitĂ© LâAir du Temps et jâai Ă©tĂ© tellement sĂ©duite par sa cuisine inventive, raffinĂ©e et savoureuse.

LâAir du Temps se situe Ă Liernu, dans la campagne namuroise. Le restaurant est installĂ© dans une Ă©lĂ©gante ferme carrĂ©e entourĂ©e de nature et dâun impressionnant potager dans lequel le chef puise une grande partie de son inspiration. Le cadre est bucolique, paisible et tellement Ă©lĂ©gant.

La cuisine de Sang-Hoon Degeimbre Ă©volue avec les saisons et ce que lui offre la nature. Fermentation, aciditĂ©, textures et associations parfois inattendues font partie de son langage culinaire. Ses racines corĂ©ennes restent prĂ©sentes sans jamais transformer lâexpĂ©rience en exercice de fusion artificielle : elles nourrissent une cuisine profondĂ©ment personnelle, contemporaine et intimement liĂ©e au terroir.
Lors de lâune de mes visites, jâavais optĂ© pour le menu « LâEssentiel », qui comprenait sept plats et deux desserts. Je me souviens notamment dâune langoustine aux algues et au citron vert, dâun ris de veau aux champignons et au miso, dâun bar de ligne aux coquillages et au gingembre, dâun fromage de chĂšvre aux herbes et au sĂ©same, dâune tartelette au chocolat blanc et au yuzu, et dâune glace Ă la vanille et au soja. Chaque plat Ă©tait un rĂ©gal, un Ă©quilibre parfait entre tradition et exotisme, entre dĂ©licatesse et gourmandise.
LâAir du Temps est sans aucun doute, Ă mes yeux, lâun des restaurants qui mĂ©ritent le dĂ©tour pour les amateurs de gastronomie en Belgique.

Sang-Hoon Degeimbre is a Belgian chef of Korean origin and the man behind LâAir du Temps, his two-Michelin-starred restaurant in Liernu, in the province of Namur. His cooking brings together his Korean roots with a deep attachment to Belgian produce, nature and ingredients grown in his remarkable kitchen garden. I have visited LâAir du Temps several times and have always been completely won over by his inventive, refined and delicious cuisine.

LâAir du Temps is located in Liernu, in the Namur countryside. The restaurant occupies an elegant square farmstead surrounded by nature and an impressive kitchen garden from which the chef draws much of his inspiration. The setting is bucolic, peaceful and wonderfully elegant.

Sang-Hoon Degeimbreâs cuisine evolves with the seasons and with what nature provides. Fermentation, acidity, textures and sometimes unexpected combinations are all part of his culinary language. His Korean roots remain present without ever turning the experience into an artificial exercise in fusion: instead, they feed a deeply personal, contemporary cuisine intimately connected to its terroir.
On one of my visits, I chose the âLâEssentielâ menu, which consisted of seven courses and two desserts. I particularly remember langoustine with seaweed and lime, sweetbread with mushrooms and miso, line-caught sea bass with shellfish and ginger, goatâs cheese with herbs and sesame, a white-chocolate and yuzu tartlet, and vanilla and soya ice cream. Every dish was a delight, achieving a perfect balance between tradition and exoticism, delicacy and indulgence.
For me, LâAir du Temps is undoubtedly one of the restaurants worth seeking out for anyone interested in gastronomy in Belgium.
